Lunch For Two: King Prawns, Baby Octopus, Sweet Potato & Green Beans

Ever since we discovered the wonders of Springvale market, hubby and I have done most of our grocery shopping there. The first time we went there together, we were wandering through all the stores and getting excited like little children. Naturally, we came back with so much food we were having trouble fitting them into our refrigerator. 

Since we now had so many great ingredients at home, there was no excuse for me to not cook up a proper lunch. Here's a tasty yet easy lunch idea for two:
  • King prawns
    • De-shell and de-vein leaving tail
    • Marinate in olive oil, garlic, herbs, spices, salt and pepper
    • Pan-fry until just cooked through on both sides 
  • Baby octopus
    • Clean (I used this tutorial here)
    • Marinate as with king prawns above
    • Pan-fry until just cooked through, draining excess water as you go
  • Sweet potatoes
    • Wash, peel and cut into small chunks
    • Boil until soft (about 20 minutes)
    • Drain water and leave to cool slightly
    • Add butter and seasonings (e.g. honey, salt, pepper) to your liking and mash with a fork
  • Green beans
    • Boil for a few minutes until tender but still crisp
    • Sprinkle with salt

The meal took just under an hour to prepare which I thought was pretty good for the number of elements. At first, it didn't look like it was going to be enough but it turned out to be very filling indeed. This is one of the reasons why I love weekends, there's plenty of time to cook and no need to microwave leftovers for lunch...
